Scallops with pistachio oil

24 fresh scallops (or frozen) Virgin olive oil and salt flakes. For the pistachio oil: Virgin olive oil. 100 g of peeled pistachios and salt. How to prepare it: If using fresh scallops, clean them by removing the slime and any remaining sand. Scoop out the meat along with the coral. Grill them for about 2 minutes on each side. Prepare the pistachio oil: grind the pistachios with the virgin olive oil and a pinch of salt. Cover the grilled scallops with this sauce and serve with an arugula salad. Note.
